Ingredients
  

  • 10 large eggs
  • ½ cup yogurt of choice (plain, dairy-free works well too)
  • 1 leek (chopped)
  • ½ pound asparagus (woody part trimmed and cut into ½-inch pieces)
  • 1 cup mushrooms
  • 1 cup peas
  • 4 ounces feta cheese (can swap with feta or a dairy-free cheese of choice)
  • 2 cloves garlic, fresh (minced)
  • ½ teaspoon turmeric, ground
  • ¼ teaspoon black pepper, ground
  • 2 tablespoons dill, fresh (finely chopped)
  • 2 tablespoons parsley, fresh (finely chopped)
  • 1 pinch sea salt (to taste)

Instructions
 

  • Preheat oven to 400 degrees.
  • Spray an oven safe frying pan with nonstick cooking spray. Add sliced mushrooms, asparagus, and leeks to the frying pan. Cook over medium heat for 8 minutes. Add the minced garlic and cook for one minute.
  • Next, add in peas, turmeric, black pepper, salt, dill, and parsley.
  • In a large bowl, whisk together the eggs and yogurt. Gently stir in the cheese.
  • Pour the egg mixture over the vegetables in the oven safe frying pan. Cook for 2 minutes. Transfer to the preheated oven and cook for 20 minutes.
  • Top with additional chopped fresh herbs and serve.
