Ingredients

  • onion, red (sliced or diced)

Instructions
 

  • Boil the Eggs
    Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let the eggs sit for 10-12 minutes. Then, transfer the eggs to a bowl of ice water to cool completely before peeling.
  • Peel and Halve the Eggs
    Once the eggs are cool, gently peel off the shells and slice each egg in half lengthwise. Carefully scoop the yolks into a mixing bowl and set the egg whites aside.
  • Make the Avocado Filling
    To the bowl with the egg yolks, add the avocado, mayonnaise, lime juice, salt, and black pepper. Mash and mix everything together until smooth and creamy.
  • Fill the Egg Whites
    Spoon or pipe the avocado yolk mixture back into the hollow centers of each egg white.
  • Garnish and Serve
    Top with your favorite garnishes like sliced red onion, fresh cilantro, or a sprinkle of paprika. Serve immediately or chill until ready to enjoy!

Hate Mayo?

  • If you dislike mayo, leave it completely out and double the amount of avocado. The creamy texture from the avocado provides enough moisture to bind the deviled egg mixture. 

Laura's Recipe Tips

Using a food processor is recommended for the smoothest, creamiest filling. It helps blend the avocado and egg yolks into a light, fluffy texture. If you don’t have a food processor, you can mash the ingredients together with a fork or use a hand mixer for a slightly chunkier, but still delicious, result.
One serving is one whole egg (which is two deviled egg halves). Since the recipe uses 6 eggs, it makes 6 servings total.
