  • Prepare Your Ingredients
    Start by finely dicing the yellow onion and mincing the garlic. Rinse and drain the white beans.
  • Layer in the Slow Cooker
    Place the chicken breasts at the bottom of your slow cooker. Pour in the chicken broth, followed by the white beans, corn, salsa verde, diced green chiles, onion, garlic, cumin, oregano, cayenne pepper, and sea salt.
  • Cook Low and Slow
    Cover and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and easy to shred.
  • Shred the Chicken
    Once the chicken is cooked through, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the pot.
  • Stir in Cilantro
    Add the fresh cilantro to the chili, stirring to combine. Let it cook for an additional 10-15 minutes to meld the flavors.
  • Serve and Enjoy
    Ladle the chili into bowls and garnish with your favorite toppings, such as sliced avocado, a dollop of Greek yogurt, extra cilantro, or a sprinkle of shredded cheese.
