  • 1 large egg (flax egg for vegan version)
  • ¾ cup milk of choice (I used unsweetend almond milk)
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup (optional, for sweetness)
  • ½ cup raspberries (fresh or frozen)

  • Mix the Dry Ingredients
    In a medium mixing bowl, whisk together the oat flour, vanilla protein powder, baking powder, baking soda, sea salt, and ground flaxseed. This ensures even distribution and fluffiness in the final batter.
  • Whisk the Wet Ingredients
    In a separate bowl, beat the egg (or flax egg), almond milk, vanilla extract, and optional maple syrup until smooth and fully combined.
  • Combine & Fold In Raspberries
    Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in the raspberries. Let the batter rest for 2–3 minutes to allow it to thicken slightly - this makes flipping easier and gives the pancakes structure.
  • Heat Your Pan & Cook
    Preheat a non-stick skillet or griddle over medium heat. Lightly grease with coconut oil or avocado oil spray. Pour ¼ cup of batter for each pancake onto the skillet.
  • Flip & Finish
    Cook each pancake for 2–3 minutes until bubbles appear on the surface, then flip and cook for another 2 minutes until golden and cooked through.
  • Serve & Enjoy
    Plate your pancakes warm with your favorite toppings like fresh berries, a drizzle of maple syrup, or a spoonful of coconut yogurt are all delicious pairings.
