Fennel, Beet and Ginger Detox Soup

  • Add onion, fennel, beet, carrot, and broth to a large soup pot over high heat.
  • Bring to a boil, then reduce heat to maintain a simmer. Add dry seasonings, then cook for 25 minutes or until all veggies are tender.
  • Add the tahini, then blend the soup into a smooth puree using an immersion blender or countertop blender.
  • Divide between 4 serving bowls and enjoy topped with optional fennel fronds.
