  • To a large pot, add the olive oil, onions, and celery, and heat over medium-high heat about 8 to 10 minutes until they turn translucent.
  • Add the garlic and stir for another minute.
  • Add the bone broth, thyme, ginger, turmeric, black pepper, and bring to a boil.
  • Stir in the carrots, mushrooms, kale, and zucchini. Allow soup to boil gently for about 10 minutes, or until vegetables are cooked tender.
  • Next, add the gluten-free egg noodles or pasta of choice, and cook for about 10 minutes, or until noodles are soft and cooked through.
  • Take Note: If you use a smaller pasta shape, the noodles will cook quicker. Cook the noodles according to the time on the package you are using.
  • Add the cooked chicken and gently warm for 5 minutes.
  • Serve with fresh parsley, red pepper flakes, and adjust the salt to your liking. I like to finish with a splash of fresh lemon juice right on top.
