  • Preheat your oven to 375 degrees Fahrenheit. Line a baking sheet with a piece of parchment paper.
  • Leaving the skin on your sweet potatoes, slice them into (12) 1-inch rounds. Make sure you opt for larger sweet potatoes to ensure larger sliced rounds. Tip: I reserve the smaller end pieces to cut up for a breakfast hash.
  • Place your slices on the lined parchment paper. Brush the top of your slices with coconut oil. Bake for 20 minutes in a 375-degree oven.
  • Remove the rounds from the oven and sprinkle lightly with the pumpkin pie spice mix and sea salt.
  • Next, top each slice with a drizzle of tahini and date syrup. Sprinkle chopped pistachios right over the top.
  • You can choose to enjoy it as is or top it with a dollop of my cranberry apple chia seed jam.
