  • Preheat oven to 400 degrees. Scrub potatoes of any dirt and rinse. Coat the bottom of a 9 X 9 inch baking dish. Peel all the potatoes.
  • Thinly slice the potatoes or use a mandolin slicer into potato chip-sized slices. Layer one layer on the bottom of the pan. Then lightly coat the top with olive oil.
  • Sprinkle half of the garlic over the top. Layer another layer over the top of the first layer of potatoes. and lightly coat with remaining olive oil.
  • Sprinkle the remaining garlic over top. Finally, sprinkle salt and pepper over top.
  • Cover with aluminum foil and place into the oven for 45 minutes. Remove foil and cook for an additional 15 minutes or until the tops begin to brown.
  • Remove pan from oven and sprinkle the fresh parsley over the top. Serve this delicious and healthy sliced scalloped potato casserole dish for any celebration.
