  • Prepare the Sweet Potatoes
    Preheat your oven to 375°F (190°C). Boil or steam the sweet potatoes until tender, about 15–20 minutes. Drain and transfer to a large bowl.
  • Mash and Mix
    Mash the sweet potatoes until smooth. Mix in almond milk, melted coconut oil, cinnamon, nutmeg, maple syrup (if using), and a pinch of salt.
  • Make the Topping
    In a small bowl, combine almond flour, chopped pecans, coconut sugar, melted coconut oil, and cinnamon. Mix until crumbly.
  • Assemble the Casserole
    Spread the mashed sweet potatoes into a greased 9x9-inch baking dish. Evenly sprinkle the topping mixture over the sweet potatoes.
  • Bake
    Bake for 20–25 minutes, or until the topping is golden and crisp. Serve warm.
