Mini Gluten Free Crustless Broccoli Quiche Bites

  • Preheat oven to 350 °F. Spray a muffin pan with nonstick cooking spray. Set aside.
  • Add the broccoli to a steamer and cover. Reduce heat to medium and let cook for 5-6 minutes. The broccoli is done when you can pierce it with a fork. Set aside.
  • In a large bowl, whisk the eggs, egg whites, milk, and flour. Set aside.
  • Heat the oil in a large non-stick skillet over medium heat. Sauté onions, bell peppers, tomato, and garlic for 7 minutes. Sauté for another 5 to 7 minutes.
  • Add steamed broccoli and cook for 1 minute. Add the salt and pepper. Pour onion mixture into the egg mixture you set aside earlier. 
  • Mix in the shredded cheese until everything is well combined. 
  • Pour into the prepared muffin pan and bake for 30 to 33 minutes.
