Ingredients
  

  • 2 chicken, breast (boneless, skinless)
  • 1 tablespoon garlic, fresh (minced)
  • 2 teaspoons tamari gluten-free soy sauce
  • 1 20-ounce can pineapple chunks (in 100% juice, not syrup
  • 1 cup barbeque sauce (see homemade bbq sauce version below or use your favorite clean brand)

Instructions
 

  • Layer Ingredient
    Place the chicken breasts into the bottom of your slow cooker. Top with minced garlic, tamari, pineapple chunks (with juice), and barbecue sauce.
  • Stir & Set
    Gently stir to coat the chicken evenly with sauce and pineapple. Cover and cook.
  • Cook on Low 6-7 Hours
    Cook on low for 6–7 hours or on high for 3–4 hours, until chicken is fork-tender.
  • Shred & Serve
    Once cooked, shred the chicken using two forks and stir it back into the sauce. Let sit for 10 minutes on Warm to absorb flavors.
