  • Prep the Meat
    In a large bowl, toss the beef chunks with gluten-free flour, salt, pepper, garlic powder, onion powder, thyme, and smoked paprika until evenly coated.
  • Sear the Meat
    Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides for about 3-4 minutes until browned. This adds depth of flavor to the stew.
  • Assemble the Stew
    Transfer the seared beef to a slow cooker. Add the diced onion, carrots, celery, potatoes, mushrooms, minced garlic, tomato paste, Worcestershire sauce, bay leaf, and rosemary. Pour in the beef bone broth and stir everything together.
  • Slow Cook
    Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the vegetables are soft.
  • Finish & Serve
    Remove the bay leaf and garnish with fresh parsley before serving.
