Instructions
 

  • Step 1: Saute Aromatics
    In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, cooking until the onions turn translucent, about 3-4 minutes.
  • Step 2: Cook Turkey or Lentils
    Add ground turkey to the pot and cook until browned, about 5-7 minutes. If using lentils, simply rinse and add them directly to the pot at the same stage. Season with Italian seasoning, salt, and pepper.
  • Step 3: Add Tomato Base
    Stir in the tomato paste, marinara sauce, and vegetable broth. Bring the mixture to a boil, then reduce the heat to medium-low. Let simmer for 5 minutes.
  • Step 4: Cook the Noodles
    Add the broken lasagna noodles and canned pumpkin. Stir well to combine, and bring the soup back to a boil. Reduce heat and simmer for 10-15 minutes, until the noodles are tender and cooked through.
  • Step 5: Finish With Coconut Milk and Spinach
    Stir in coconut milk and fresh spinach, allowing the spinach to wilt in the hot soup.
  • Step 6: Top With Ricotta
    Either stir in ricotta cheese for a creamier texture, or serve the soup with a dollop of ricotta (or the dairy-free alternative) in the center of each bowl.
  • Step 7: Garnish and Serve
    Top with fresh basil and parsley for a burst of freshness. Serve hot and enjoy this comforting bowl of turkey pumpkin lasagna soup!
