Wild Rice with Mushrooms and Herbs Salad

Ingredients
  

  • 1 cup wild rice
  • 8 cups water
  • 1 pound mushrooms, baby portobello
  • ½ onion, yellow
  • 2 tablespoons dill, fresh (Chopped)
  • 2 tablespoons parsley, fresh (Chopped)
  • 2 tablespoons thyme, fresh (Chopped)
  • 1 juice lemon, juice
  • 1 tablespoon extra virgin olive oil
  • 1 pinch sea salt (To taste)

Instructions
 

  • Bring water to boil. Pour rice into boiling water. Reduce heat to simmer and cover with a lid. Cook for 30 to 45 minutes. Wild rice should be chewy in texture.
  • Preheat oven to 350°F.
  • Cut off stems and quarter each mushroom.
  • Dice onion into small pieces.
  • Chop dill, parsley, and thyme into fine pieces.
  • Cut the lemon into wedges.
  • Add mushrooms and onions into a mixing bowl.
  • Add olive oil and toss together until mushrooms and onions are completely coated.
  • Add mushrooms and onions to baking sheet.
  • Bake for 15 to 20 minutes, or until mushrooms and onions are slightly browned.
  • Toss wild rice, mushrooms, onions, dill, parsley, and thyme together to complete the salad.
  • Add salt and pepper to taste, and serve with lemon wedge.
