Purple Sweet Potato Chia Pudding
Equipment
Ingredients
- 1 medium sweet potato, purple (Cooked)
- ¼ cup chia seeds
- 1 cup milk of choice (Unsweetened Almond MIlk)
- 1 ½ tablespoons maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon cardamon, ground
- 1 teaspoon purple sweet potato powder (Optional)
OPTIONAL TOPPINGS:
- blueberries
- coconut flakes, unsweetened (Unsweetened)
- raw cacao nibs
- coconut chips, toasted
- coconut cream
Instructions
- First roast the sweet potatoes in a baking dish inside a 400 degree oven for 30 minutes.
- Mash the cooked sweet potato in a bowl. Add the rest of the ingredients to combine well until creamy and smooth.
- In two medium-sized airtight containers or mason jars, divide the mixture into two servings.
- Refrigerate for at least 20 minutes, 4 hours is optimal, or even overnight.
- To serve, divide into 2 serving dishes and top with some additional topping suggestions.
