I love casseroles and potatoes. Potatoes are naturally gluten-free, therefore, they are one of my main sources of carbohydrates, especially sweet potatoes. But today I am talking about russet potatoes.

Healthy, Vegan Scalloped Potato Casserole
Equipment
Ingredients
- 8 potatoes, russet
- 2 tablespoons extra virgin olive oil
- 1 tablespoon parsley, fresh (Chopped)
- ¼ teaspoon sea salt
- 5 cloves garlic, fresh (Finely chopped)
- ¼ teaspoon black pepper, ground
Instructions
- Preheat oven to 400 degrees. Scrub potatoes of any dirt and rinse. Coat the bottom of a 9 X 9 inch baking dish. Peel all the potatoes.
- Thinly slice the potatoes or use a mandolin slicer into potato chip-sized slices. Layer one layer on the bottom of the pan. Then lightly coat the top with olive oil.
- Sprinkle half of the garlic over the top. Layer another layer over the top of the first layer of potatoes. and lightly coat with remaining olive oil.
- Sprinkle the remaining garlic over top. Finally, sprinkle salt and pepper over top.
- Cover with aluminum foil and place into the oven for 45 minutes. Remove foil and cook for an additional 15 minutes or until the tops begin to brown.
- Remove pan from oven and sprinkle the fresh parsley over the top. Serve this delicious and healthy sliced scalloped potato casserole dish for any celebration.
